Isan’s own language is essentially the same as Lao, mutually intelligible across the modern Thailand-Laos border, a reminder that the region was historically part of the wider Lao cultural world before being absorbed into Siam, and Isan cuisine, especially dishes like som tam papaya salad and sticky rice, has since become hugely influential across the whole of Thailand.
